Dry your meat and seafood with a paper town before you fry it

 

The secret to amazing meat is cooking it in a way that locks the moisture in. If you put wet meat into the pan, the excess moisture will steam up and dry out your meat. By patting it dry, you can get that caramelized edge that makes the meat taste so good.

 

That caramelized edge will only appear after you’ve dried out the meat. It locks the moisture in, it tastes delicious, and it makes your meat look good enough to be worthy of an Instagram post. Don’t forget to pat your seafood and meat dry before you put it in the pan!

 

Rinse your rice before you cook it

 

You know how rice clumps together after you cook it? Those huge balls of rice stick together, making it hard to scoop the rice out and even harder to put the right amount of rice on your plate. You can prevent this from happening by rinsing your rice with water before you cook it. When the rice is still dry and uncooked, put it in a mesh bag or a colander that has the smallest possible holes.

 

Run water over the rice until the water is clear coming off the rice. Clumping might not seem like a big deal, but you’ll never want to deal with it again once you experience what it's like to serve rice that doesn’t stick together.

 

Always heat the pan before you put food in it

 

Earlier in this post, we told you that meat tastes best when you seal the moisture in it. That’s still true, and the last tip in our blog is all about making sure you don’t lose that moisture in the early stages of cooking. If you put meat in a cold pan, the meat will release all its moisture as the pan heats up. If you put meat in a pan that’s already hot, however, the heat coming from the pan will sear the outside of the meat and keep the moisture inside.
